Cake Fillings

These filling cane be used for any cakes, but also go great in rolled cakes, like a traditional Yule Log cake. Just a few of my faves! My apple pie and chocolate fudge are/can be made vegan/dairy free and you can SEE THIS POST for a Vegan Filling & Frosting Recipe! Scroll on for more recipes!

Apple Pie Filling

Ingredients
  • 3-4 c Mixed apples, diced & peeled
  • 1 tsp fresh grated ginger
  • 1/2 tsp fresh grated nutmeg
  • 1/2 tsp cinnamon
  • 1/4 c sugar, as needed (sweeter appled don’t really need it)
  • 1 tsp corn starch
Instructions
  1. Combine all ingredients in saucepan over medium heat
  2. Cook, stirring frequently, until apples are softened
  3. Cool completely before filling cake
  4. OPTIONAL: Drizzle liberally with caramel for caramel apple filing 🙂

Cannoli Filling

Ingredients
  • 2 cups ricotta cheese, preferably whole milk
  • 3/4 cup powdered sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon allspice
  • 1/4 cup heavy cream
  • 1/4 cup small semisweet chocolate chips

Instructions
  1. In separate bowls:
    1. Bowl 1: whisk together ricotta, powdered sugar, cinnamon, and allspice until smooth
    2. Bowl 2: whisk heavy cream until stiff peaks form
  2. Using a rubber scraper or spoon, gently fold the two mixtures together.
  3. Gently stir in chocolate chips the chocolate chips.
  4. Use to fill cakes or traditional cannoli while chilled.
  5. Store dessert chilled.

Chocolate Fudge Filling

Ingredients
  • 2 cups chopped semisweet chocolate or chocolate chips
  • 3/4 cup cream (light, whipping, or heavy) or milk, or a combination
  • OPTIONAL: Coconut cream can be used to a vegan/dairy friendly ganache
  • OPTIONAL: 1 tsp flavor extract of your choice
Instructions
  1. Combine the chocolate and cream in a microwave-safe bowl.
  2. Heat until the cream is very hot and the chocolate very soft.
  3. Stir to melt the chocolate completely, reheating very briefly if necessary.
  4. Add flavor extract if using.
  5. Cool completely before filling.
    1. The colder you chill it the stiffer it will be.
    2. Chilled in fridge this can make truffles 🙂

Cream Cheese Filling

Ingredients
  • 2 (8-ounce) package cream cheese, softened
  • 1 c sugar
  • 1 tsp vanilla extract
Instructions
  1. Beat cream cheese at medium speed with an electric mixer until creamy
  2. Gradually add sugar and vanilla.
  3. OPTIONAL: stir in any mix-ins (chocolate chips, dried fruit, edible petals, etc)
  4. Use to fill cake.
